What Rooftop Grease Containment Actually Is
Containment is the hardware around your exhaust fan that catches grease before it reaches the roof. That means the receptacle plumbed to the fan’s drain, absorbent pads or pillows sitting in a rack or tray. It also means curb-mounted enclosures that wrap the fan base, and deflector pans on side-wall fans. Cleaning pulls grease out of the system. Containment manages what the system pushes out. A kitchen can be spotless inside and still be staining its roof every night of the week.
What the Code Requires at the Fan
NFPA 96 is the standard Phoenix and the surrounding Maricopa County jurisdictions enforce through the fire code. The 2024 Phoenix Fire Code carries it forward. It requires an upblast exhaust fan to drain into a grease receptacle of no more than one gallon. That receptacle has to stay readily accessible and visible. Drip trays have to be pitched so they drain into an enclosed metal container under that same limit. What an inspector is looking for is simple: a receptacle that exists, is not overflowing, and can be reached without taking the fan apart. A five-gallon bucket wedged against the curb satisfies none of that.
Why Phoenix Roofs Take This Harder
A roof surface in the Valley runs far hotter than the air temperature for months at a stretch. Hot grease does not behave like grease anywhere cooler. Instead of congealing near the curb it thins out and travels, so a small leak covers a lot more membrane. Sun and grease together are hard on single-ply and modified bitumen roof systems. Monsoon runoff then moves whatever is already up there toward drains, scuppers and parapets, sometimes down the front of the building. Blowing dust binds into the grease and turns it into an abrasive paste that gets tracked across the roof by everyone who goes up. And most Valley kitchens sit on leased pads and in strip centers — the Price Corridor, SanTan Village, Old Town Scottsdale, Arcadia, Westgate, Desert Ridge — where the roof is the landlord’s asset and the damage clause is yours.
What We Do on the Roof
Rooftop work is part of every kitchen exhaust cleaning we perform, not a separate trip:
- Photograph the fan, the curb and the surrounding membrane before anything is touched
- Hinge the fan up and clean the housing, blades and shroud, and check the belt
- Clear the fan drain line and clean the curb area, including the side that is awkward to reach
- Empty and clean the grease receptacle
- Check the absorbent media and tell you whether it still has capacity left
- Look downhill for grease travel at roof drains, scuppers and seams
- Flag membrane damage, ponding or previous patchwork so you can raise it with your landlord before it becomes a leak
- Leave a dated service label and send a photo report with your service documentation
Signs Your Containment Is Not Keeping Up
- Dark staining spreading outward from the fan curb
- Grease at a roof drain or scupper, or streaking down an exterior wall
- Absorbent pads pressed flat and saturated, or missing altogether
- A receptacle that is overflowing, or is not there at all
- Grease dripping off the fan housing onto the curb
- A letter from your landlord, or a roofer’s report that mentions grease
Several of those are hardware problems rather than housekeeping. A plugged drain line, a failed gasket, a fan that no longer hinges cleanly or a curb that needs an extension are exhaust system repairs, and we can quote them off the same inspection instead of sending you to a second vendor.
Containment Is Not Install-and-Forget
Absorbent media has a finite capacity, and once it is saturated it stops absorbing and starts shedding. The right interval tracks your cook volume the same way your hood cleaning frequency does — a high-volume wok line or a 24-hour operation loads containment far faster than a cafe. Filters that are past due make it worse, because anything the hood does not catch ends up on the roof, so we review your filter exchange interval at the same time. We look at it on every visit so the schedule matches what your kitchen is actually producing rather than a date on a calendar.

Because your exhaust system is doing its job. Everything the hood pulls off the cookline that the filters do not catch travels up the duct and out the fan, and some of it lands. It turns into a problem when the volume outruns whatever is supposed to be catching it — filters that are not exchanged often enough, a plugged fan drain, a receptacle nobody has emptied, a damaged gasket at the fan base, or simply no containment at all. In a high-volume kitchen it is often several of those at once.
It works its way toward the weak points. Grease stops a roofing membrane from shedding water the way it was designed to, and it migrates downhill toward seams, penetrations and roof drains, which is exactly where leaks start. Long before you get a leak it is a slip hazard for every HVAC and refrigeration technician who has to walk that roof, and a visible stain that a property manager or a fire inspector will eventually ask you about.
No, and the two get mixed up constantly. A grease trap or interceptor sits in your plumbing and catches fats, oils and grease heading down the drain before they reach the sewer. Rooftop containment sits around your exhaust fan and catches airborne grease coming out of the ventilation system. Different equipment, different code, different failure. You can be perfectly current on your grease trap and still be staining your roof every night.

What decides it is how much grease your system is actually discharging and what is happening to the membrane around the fan curb, and neither of those can be judged from inside the building. We go up on the roof during the free inspection, photograph what is there, and tell you honestly whether you need hardware or just a better maintenance schedule.

Usually, yes. Most Valley retail and pad leases give the landlord control of the roof and require sign-off before anything is mounted or penetrated, and many of them require that work touching the membrane be done by the landlord’s own roofer. That is a step rather than an obstacle. The photo documentation from the inspection is what makes the conversation easy, because it shows the property manager the actual condition of the roof instead of asking them to take your word for it.
Your lease decides that, not us. In most Valley retail and pad leases the roof stays the landlord’s asset while damage caused by the tenant’s equipment falls on the tenant, which means grease coming out of your exhaust fan is usually your exposure. Read the maintenance and surrender clauses, and have your attorney review them if you are not sure.
