There is a second, worse version of this. Links sometimes get painted during a quick hood touch-up, which does the same thing permanently. Either way, the component is still physically present, still passes a visual glance, and still cannot do its job on the timeline it was engineered for.

Links are consumable parts. They are meant to be replaced, not preserved. Under NFPA 96 section 11.2.4, standard metal alloy fusible links must be replaced at least semi-annually, with only bulb-type and non-metal-alloy detectors on the annual cycle.

How Grease Skins Over a Discharge Nozzle

Nozzle caps are designed to blow off under discharge pressure so the agent reaches the appliance in a specific engineered pattern. That design assumes the cap is clean.

A hardened grease skin can glue a cap in place or partially foul the orifice. When that happens the discharge pattern distorts, and a system designed to blanket a fryer surface instead sprays across it. The agent is still released. It just does not land where the engineering said it would.

A grease-loaded plenum and duct change the fuel available. A fire that reaches heavy accumulation in the ductwork is no longer the fire the system was sized for. The agent is a potassium-based solution that does two jobs at once. It cools burning grease below its auto-ignition temperature, and it reacts with the grease surface to form a soapy foam blanket, a process called saponification, that seals out oxygen and prevents re-flash.

Dry chemical systems, common decades ago, cannot meet the UL 300 listing standard that current codes require, because they do not create that sealing layer and re-flash is likely.
