Our Guiding Lights

Kitchen Guard’s Mission, Vision & Values

Kitchen Guard of Orange County is a locally owned franchise of Kitchen Guard, the commercial kitchen exhaust cleaning brand founded in San Diego in 2009. Our job is narrow and we take it seriously: clean commercial kitchen exhaust systems end to end — canopy, filters, duct run and rooftop fan — to the NFPA 96 standard, document the work with photographs and a dated report, and leave the kitchen ready for whichever inspector walks in next. Every technician on our crew is trained by instructors who hold IKECA’s Certified Exhaust Cleaning Specialist credential.

Devotion icon

Devotion

Committed to delivering the best for the restaurants, hotels, schools and healthcare kitchens we serve across Orange County.

Resourcefulness icon

Resourcefulness

Orange County has 34 cities, two kinds of fire inspector and dozens of sewer districts. We know whose rules apply to your kitchen and we clean to the strictest of them.

Resilience icon

Resilience

Staying steadfast in our mission, no matter the obstacle. Kitchens run late, roofs are hard to reach and grease does not clean itself. We finish the job.

Accountability icon

Accountability

Owning our actions and their outcomes. Every service ends with a dated NFPA 96 label in your kitchen and a photo report in your inbox before the truck leaves.

Our Journey

Kitchen Guard started in San Diego in 2009 as Green Guard Services and grew into a franchised brand under EverSmith Brands. Kitchen Guard of Orange County opened in 2025, owned and run by Elijah Arcos, and serves restaurants and commercial kitchens from Fullerton to Newport Beach.

Elijah Arcos

Elijah grew up in Porterville, the third of seven children, and came to Orange County by way of a business degree in San Diego and a hot-mop waterproofing company he grew from seven employees to thirty. He chose Kitchen Guard because it is the same kind of work: technical, essential, and judged by whether the customer is safer when you leave. He opened Kitchen Guard of Orange County in 2025 and runs it day to day.
