The pad under the dumpster, the drive-thru lane, the service door apron and the sidewalks your customers cross all collect what the kitchen puts out, and they are the first thing a customer or an inspector sees. Nobody decides where to eat because the concrete looked good. Plenty of people decide against it because it did not.<\/p>\n<h2>What the Pad Says About the Building<\/h2>\n<p>Waste and refuse areas are part of a health inspection, and a rancid pad is an avoidable finding that invites closer attention to everything else. Grease-sheeted concrete is a genuine slip hazard, and the people most exposed to it are your own staff carrying bags out after close. Standing organic residue is what draws pests to the back of the property, which turns a housekeeping problem into a different kind of inspection problem. Grease that gets past loaded filters travels the ductwork and exits at the roof, and what does not stay in the duct comes down. If your exterior is deteriorating faster than the cleaning schedule explains, the answer is often <a href=\"\/neo\/filter-exchange\/\">filter exchange<\/a> and a full <a href=\"\/neo\/hood-cleaning\/\">commercial hood cleaning<\/a> rather than more frequent washing. Biodegradable detergent does not change that, because the runoff is still industrial wastewater.
