Documentation is what a fire marshal asks for first, and what your insurer wants after a claim.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Every operator in Northeast Georgia eventually asks the same question: how often do we actually have to clean the hood? The honest answer is that it depends on what you cook and how much of it. The standard that decides the answer is NFPA 96, and your local fire marshal is the one who checks whether you have kept up.<\/p>\n\n\n\n<h2 id=\"h-the-standard-behind-the-rule\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"The_standard_behind_the_rule\"><\/span>The standard behind the rule<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><a href=\"https:\/\/www.nfpa.org\/codes-and-standards\/nfpa-96-standard-development\/96\" target=\"_blank\" rel=\"noopener noreferrer\">NFPA 96<\/a> is the Standard for Ventilation Control and Fire Protection of Commercial Cooking Operations. Georgia\u2019s <a href=\"https:\/\/rules.sos.ga.gov\/gac\/120-3-3\" target=\"_blank\" rel=\"noopener noreferrer\">state minimum fire safety standards<\/a> bring NFPA codes into force, and enforcement happens locally \u2014 Athens-Clarke County, Gwinnett, Barrow, and Hall County each have their own fire marshal\u2019s office running inspections. Code editions get updated on a cycle, so it is always worth confirming the currently adopted edition with the authority having jurisdiction over your address.<\/p>\n\n\n\n<h2 id=\"h-the-four-inspection-frequencies\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"The_four_inspection_frequencies\"><\/span>The four inspection frequencies<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">NFPA 96 sorts kitchens into four buckets based on cooking volume and fuel type. Find yours:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Monthly \u2014 solid fuel cooking.<\/strong> Wood, charcoal, or pellet-fired equipment. Creosote and solid fuel residue build fast and burn hot, so there is no flexibility here.<\/li>\n\n\n\n<li><strong>Quarterly \u2014 high-volume cooking.<\/strong> Twenty-four-hour operations, heavy charbroiling, and wok cooking. If your line runs hard and long, this is you.<\/li>\n\n\n\n<li><strong>Semiannually \u2014 moderate-volume cooking.<\/strong> The bucket most sit-down restaurants land in.<\/li>\n\n\n\n<li><strong>Annually \u2014 low-volume cooking.<\/strong> Churches, seasonal operations, day camps, and senior centers that cook occasionally rather than daily.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">One distinction trips people up constantly. Those intervals are <em>inspection<\/em> frequencies. The cleaning requirement is separate: if the inspection finds grease accumulation, the system has to be cleaned, whatever the calendar says. A high-volume kitchen inspected quarterly will almost always need cleaning quarterly too.<\/p>\n\n\n\n<h2 id=\"h-which-bucket-is-your-kitchen\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Which_bucket_is_your_kitchen\"><\/span>Which bucket is your kitchen?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">A few examples from our own routes. A downtown <a href=\"\/ne-atlanta\/hood-cleaning-athens-ga\/\">Athens<\/a> burger bar running a charbroiler until close is high volume, so quarterly. A <a href=\"\/ne-atlanta\/hood-cleaning-gwinnett-county-ga\/\">Gwinnett County<\/a> banquet hall serving events a few nights a week is usually moderate, so semiannual. A <a href=\"\/ne-atlanta\/hood-cleaning-winder-barrow-county-ga\/\">Winder<\/a> fellowship hall that fires up the range for Wednesday suppers is low volume, so annual. And anybody running a wood-fired pizza oven is on a monthly cycle regardless of how busy the dining room is.<\/p>\n\n\n\n<h2 id=\"h-what-the-fire-marshal-actually-looks-for\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"What_the_fire_marshal_actually_looks_for\"><\/span>What the fire marshal actually looks for<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Inspections are more specific than most owners expect. The common checkpoints:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>A current service sticker or certificate on the hood showing the date of last cleaning and who performed it.<\/li>\n\n\n\n<li>A written service report you can produce on request, with technician name, date, and scope.<\/li>\n\n\n\n<li>Access panels present, unobstructed, and actually openable \u2014 painted-over or screwed-shut panels are a frequent write-up.<\/li>\n\n\n\n<li>Bare metal in the duct and at the fan. Inspectors scrape. A hood that looks clean from the kitchen floor tells them nothing about the horizontal duct run.<\/li>\n\n\n\n<li>Correct filter type, properly seated, with no gaps that let grease bypass into the duct.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">This is why we photograph every section of the system on every visit. When an inspector asks what the inside of your ductwork looked like in March, a written report plus dated images answers the question immediately.<\/p>\n\n\n\n<h2 id=\"h-the-hood-is-only-part-of-the-system\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"The_hood_is_only_part_of_the_system\"><\/span>The hood is only part of the system<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">\u201cHood cleaning\u201d is a misleading name for the job. The canopy is the part you see, but the grease that actually starts fires collects in the horizontal duct runs and at the fan on the roof. A proper <a href=\"\/ne-atlanta\/hood-cleaning\/\">commercial hood and exhaust cleaning<\/a> covers canopy, filters, full duct network, and rooftop fan. If your last provider only wiped down the canopy, you are carrying fuel load you have never seen. The less obvious ones cost money sooner: a failed inspection can mean a re-inspection fee and a return visit, insurance carriers increasingly ask for cleaning documentation at renewal, and a grease fire claim with no service records is a claim you may end up arguing about. Downtime is the quiet one \u2014 an emergency shutdown in the middle of service costs far more than a scheduled overnight cleaning.<\/p>\n\n\n\n<h2 id=\"h-common-questions\" class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Common_questions\"><\/span>Common questions<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Can_I_clean_the_hood_myself\"><\/span>Can I clean the hood myself?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Your staff should be wiping down the canopy and washing filters as part of nightly close, and that genuinely helps. But NFPA 96 requires the full system inspection and cleaning to be done by properly trained, qualified, and certified personnel, and self-cleaning will not satisfy an inspector looking for documentation.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Do_you_have_to_clean_at_night\"><\/span>Do you have to clean at night?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Almost always, yes. The system has to be cold and the kitchen has to be out of service. Most of our work happens overnight or on closure days so nobody loses a shift.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"How_long_does_a_cleaning_take\"><\/span>How long does a cleaning take?<span class=\"ez-toc-section-end\"><\/span><\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">For a single-hood kitchen, typically three to five hours including setup and teardown. Larger multi-hood operations and long rooftop duct runs take longer.
